We are committed to sustainable and responsible practices in all aspects of our business. We work closely with local suppliers to source fresh, high-quality ingredients, thereby supporting the local economy and reducing our environmental footprint.
The richness of a territory lies in the wisdom, diversity, and craftsmanship of its people, who strive daily to ensure that their trades, work, and traditional methods are not forgotten. Based on the exclusivity and uniqueness of its proposal, the chef has always been clear that his network of distributors had to be predominantly local and nearby. We have 2,500 trees to reduce our carbon footprint, and we also work with the local seed bank of the national seed network.
El Tejar (Fuentealbilla) is the estate where the family home of Juan Monteagudo is located, and where the Albacete-born chef has a 100% organic two-hectare garden dedicated exclusively to Ababol. Here, fruit trees, saffron, vegetables, and numerous olive trees grow, providing the oil used for cooking.

The majority of the vegetables in his pantry come from two extensive gardens, Casa Garrido and Casa Carrasco, which have been owned by his family for over 400 years in Tarazona de la Mancha.
